Can someone please summarize for me what the beliefs of the Cult of Cthulhu are? Sorry for an amateur question.

Thanks for your question, we actually need more people asking these basic kinds of questions. Kudos for that.
Your question is only amateur in the sense that it's very vague and in giving an answer I'm having to assume what you want to know. Here goes:
I'm assuming that you're thinking from a paradigm where all religions must have a coherent set of beliefs about some 'god(s)' and this entity(s) relation to mankind and the universe.
We don't. (But a member can, but that's a whole 'nother sack o' potatoes).
Instead, our beliefs are meta-beliefs -- in other words, beliefs about beliefs.

Can you recommend some good books or writings I can read to understand more? What does cthulhu have to do with it? Do you believe that Cthulhu is real?

In my opinion, the definitive book of the Cthulhu Cult hasn't been written yet. The official books are
Cthulhu Cult by Venger Satanis and Liber A:O by Venger Satanis
Again, IMHO, Liber A:O is much better than Cthulhu Cult, your results may vary.
I personally recommend
Condensed Chaos by Phil Hine and The Psychology of Man's Possible Evolution by P.D. Ouspensky and Call of Cthulhu by H.P. Lovecraft and The Intro to Thundarr the Barbarian (I shit you not)
If you read these first (which I didn't,BTW) it will give you a better insight into what his green holiness was up to when he wrote the official material.
